Maori Bread 2 eggs
  1/3 cup vegetable oil
1 1/4 cups all - purpose flour Optional:
1 cup sugar 1/4 cup ripe banana, mashed
2 tsp. baking soda 1/2 cup chopped nuts
1/2 tsp. salt 1/2 cup shredded coconut
3/4 tsp. allspice Combine and mix thoroughly flour, sugar, baking soda, salt, allspice, nutmeg, and cinnamon,
Nutmeg, to taste In a large bowl, blend the cassava (or pumpkin), eggs, oil, and optional banana. Add dry ingredients. Mix well. Fold in optional nuts and coconut.
Cinnamon, to taste Spread batter in one well-greased 8 - by 5 - by 3 - inch loaf pan. Bake at 350 degrees for 1 hour. Cool in pan for 10 minutes, remove, and cool further on wire racks.
1 cup boiled cassava, mashed (substitute 1 cup canned pumpkin)
