| Maori Bread | 2 eggs |
| 1/3 cup vegetable oil | |
| 1 1/4 cups all - purpose flour | Optional: |
| 1 cup sugar | 1/4 cup ripe banana, mashed |
| 2 tsp. baking soda | 1/2 cup chopped nuts |
| 1/2 tsp. salt | 1/2 cup shredded coconut |
| 3/4 tsp. allspice | Combine and mix thoroughly flour, sugar, baking soda, salt, allspice, nutmeg, and cinnamon, |
| Nutmeg, to taste | In a large bowl, blend the cassava (or pumpkin), eggs, oil, and optional banana. Add dry ingredients. Mix well. Fold in optional nuts and coconut. |
| Cinnamon, to taste | Spread batter in one well-greased 8 - by 5 - by 3 - inch loaf pan. Bake at 350 degrees for 1 hour. Cool in pan for 10 minutes, remove, and cool further on wire racks. |
